She subsequently switched to a business litigation and appellate practice with the same firm, now known as Stinson Leonard Street LLP. As a litigator, Scarlett handled cases in state and federal courts on a wide variety of legal issues including business torts, contracts, antitrust, fiduciary duties, shareholder rights, insurance, consumer protection, condemnation and products liability.

Scarlett was a law clerk for Justice Clarence Thomas of the Supreme Court of the United States and a law clerk for Judge Pasco M. Bowman of the United States Court of Appeals for the Eighth Circuit. Concurrently with her law practice, she was a Lecturer at the University of Kansas School of Law.
